This easy slow cooker version takes all the stress out of making brisket—no smoking, no complicated steps, just simple ingredients and time doing the magic. Ingredients
• 3–4 lb beef brisket
• 1 tbsp olive oil (for searing, optional)
• 1 large onion, sliced
• 4 garlic cloves, minced
• 1 cup beef broth
• ½ cup tomato sauce or crushed tomatoes
• 2 tbsp Worcestershire sauce
• 2 tbsp brown sugar
• 1 tbsp apple cider vinegar
• 1 tsp paprika
• 1 tsp salt
• ½ tsp black pepper
• ½ tsp dried thyme or rosemary
Directions
Season the brisket
Pat dry and rub evenly with salt, pepper, and paprika.
Optional sear for deeper flavor
Heat olive oil in a skillet over medium-high heat. Sear brisket 2–3 minutes per side until nicely browned, then transfer to the slow cooker.
Build the base
Place sliced onions and garlic in the bottom of the slow cooker. Set brisket on top.
Make the sauce
Whisk together beef broth, tomato sauce, Worcestershire sauce, brown sugar, apple cider vinegar, and thyme. Pour over the meat.
Cook low and slow
Cover and cook:
• LOW for 8–10 hours
• HIGH for 4–5 hours
Brisket is ready when it’s fork-tender and easy to slice.
Rest and serve
Let brisket rest 10 minutes, then slice against the grain. Spoon plenty of sauce over the top.
