Crispy Cheesy Mashed Potato Puffs

Got leftover mashed potatoes? Turn them into golden, crispy bites that are fluffy inside and packed with cheesy goodness! These irresistible potato puffs are quick to make and perfect as an appetizer, party snack, or even a light comfort-food lunch. Add herbs, swap cheeses, or spice them up — they’re easy to customize and always a crowd favorite.

 Ingredients

• 3 cups mashed potatoes
• 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
• ¼ cup all-purpose flour
• 2 tbsp grated Parmesan cheese
• 2 tbsp chopped chives
• ⅓ cup sour cream
• Salt, to taste
• 2 eggs, beaten

 Instructions

 Mix the base
In a large bowl, combine mashed potatoes, shredded cheese, flour, Parmesan, chives, sour cream, and salt. Stir until evenly blended.

 Add the eggs
Pour in the beaten eggs and mix thoroughly until the mixture holds together.

Shape
Form into small balls or flatten slightly into mini patties, depending on your preference.

 Cook

✔ Bake:
Preheat oven to 400°F (200°C). Arrange on a parchment-lined baking sheet and bake 15–20 minutes, until golden and lightly crisp.

✔ Fry:
Heat oil in a skillet over medium heat. Fry in batches until golden brown and crispy on all sides. Drain on paper towels.

Serve warm
